Nectar is an iconic Pedro Ximenez (PX) sherry.
If you’re looking for a rich, sweet and velvety smooth sherry to dovetail with desserts or Christmas pudding – then look no further folks, for this is Pedro Ximenez is a complex coming together of caramel, dried fruits, figs, mocha, nuts and spices..
The Pedro Ximenez grapes are collected from the vines slightly later and they are sundried in a process called ‘soleo’. Bunches are laid out on esparto mats in the vineyard for up to two weeks. During this time the grape loses about 40% of its volume due to evaporation of water which causes concentration of the sugars. The raisined grapes are then pressed (in a similar way to olive oil production). The must ferments until around 7% ABV due to the amount of sugar. The wine is then fortified to 15% ABV and enters the Nectar solera where it remains in cask for an average of 8 years before its ready to be bottled.
